They’re the perfect sweet and salty combination and super easy to make.

Tips for Making Honey Roasted Cashews

Buy Cashews in Bulk

Cashews can be pricier than other nuts, which is why I ALWAYS get this large pack from Sam’s Club.

You will also be able to get a better deal on unsalted whole cashews vs. buying them in a regular grocery store.

Plus, since you can freeze these nuts for up to 6 weeks, you can easily make a few batches ahead of time.

Line Your Baking Sheet with Parchment Paper

Nobody wants to deal with a sticky or burnt mess, so do yourself a favor and line your baking sheet with non-stick parchment paper.

It makes for super easy clean-up!

Spread Nuts in Even Layer

Before roasting your cashews, make sure you spread all your nuts out in an even layer so that they cook evenly.

Stir Them Well

Make sure you evenly stir your cashews once adding on the sugar/salt mixture.

You want all of the cashews to have plenty of flavor on them. I like to use these small non-stick spatulas for this.

Let Them Cool Then Break Apart

You might be tempted to immediately mess with your cashews out of the oven, but let them cool completely for 5-10 minutes or so.

After they’ve cooled, you can break apart any large clumps and store in an airtight container.

Gift Them to Family/Friends

Mason jars, vintage containers, or tins are all great storage options for gifting these delicious honey roasted cashews.

You can also easily combine them with other nuts and/or chocolate for a delicious gift.

Should I use roasted or raw cashews?

You can use either, but I personally recommend using plain, roasted cashews since they are less expensive and easier to find.

What type of cashews do I need for honey roasted cashews?

Since we are seasoning these cashews up ourselves I recommend using unsalted, plain cashews or at a minimum lightly salted cashews.

My favorite are these whole unsalted cashews from Sam’s Club.

Can I substitute peanuts or other nuts instead?

Absolutely! Peanuts make a delicious and affordable substitute if you can’t use cashews for this recipe.

You could also do a yummy mixture of half and half.

How long do honey roasted cashews last?

If stored in a glass Mason jar or airtight container, the nuts will remain fresh at room temperature for up to 5 days, in the fridge for up to 10 days, or in the freezer for up to 6 weeks’ time.

Honey Roasted Cashews Variation Ideas:

Add Some Spices

These cashews are delicious as-is, but if you want to add a little extra something, feel free to add some spices such as Cayenne Pepper, Cinnamon, Nutmeg, Curry, or Cumin.

I recommend adding ¼ – ½ tsp of your choice of spice.

Add Fresh Herbs

Another way to really elevate the flavor of your nuts is to add some chopped fresh herbs.

Simply add 1-2 tsp of chopped rosemary, oregano, or thyme after the nuts have been roasted in the oven.

Use Sea Salt Flakes

If you prefer a more salty flavor, feel free to add in an additional ½ tsp of sea salt flakes with your sugar mixture.

This flaky sea salt is my absolute favorite and is also what I use in my delicious Salted Brown Butter Chocolate Chip Cookies.

How to Store/Package Honey Roasted Cashews

There are many ways you can store honey roasted cashews and they even make great gifts!

I personally love to store smaller servings of honey cashews in these mason jars because they tend to stay fresher longer.

You can also easily add cute labels, ribbon, or fabric for gifting to family and friends.

For times when I make them in bulk to freeze, I like to freeze in re-usable freezer safe bags for easy snacking whenever a craving strikes.

Room Temperature

Freshly made honey roasted cashews can be stored in an airtight container or mason jar at room temperature for up to 5 days.

Fridge

Honey Roasted Cashews can be stored in an airtight container in the refrigerator for up to 10 days.

After that, transfer to the freezer until ready to eat.

Freezer

Honey Roasted Cashews can be made ahead and stored in the freezer in an airtight container or freezer safe bag for up to 6 weeks.

Once ready to eat, remove from freezer, and enjoy as is, or let them come to room temperature.

Step 1

Melt butter in a small saucepan over low-medium heat and add in honey and cinnamon. Stir until evenly combined.

Next add in cashews and stir until all the nuts are evenly coated.

Remove from heat and spread in an even layer on the parchment paper lined baking sheet.

Bake in a preheated oven for 5 minutes, toss, and bake additional 5 minutes.

While cashews are baking combine sugar and salt together in a small bowl.

Once cashews have baked 10 minutes total, pour sugar and salt mixture over the hot cashews and evenly toss until all the nuts are well coated.

Let cool for 5-10 minutes before eating or storing.
