Summer is here! With the freedom of summer comes the anticipation of outings and adventures. During these balmy days I like to take my girls outside to enjoy nature and the sunshine. Sometimes we’re having so much fun that we get home and I’m scrambling to make something for dinner.
I think every family has a default meal that they prepare when they’re in a crunch for time.
This salmon rice recipe is my family’s favourite. I can usually throw it together because it only needs three ingredients (four if you count the soy sauce you serve on top of it)! Plus, it takes less than half an hour to prepare!

Salmon Rice

Ingredients
- 1 can sockeye salmon,
- 1/3 cup mayonnaise,
- 2 cups cooked rice,
- salt and pepper.
Instructions
- While rice is cooking, mash salmon in a medium sized bowl
- Add mayonnaise to salmon
- Season salmon mixture with salt, pepper, and/or other seasonings (optional)
- Once rice is cooked, combine the rice with salmon mixture
- Serve with soy sauce and top with chopped green onion (optional)

NOTABLES
- Other toppings include: chopped tomato, cucumber, or shredded cheese
- This pairs well with any vegetable
- Spice up your salmon rice with a wasabi and soy sauce mixture
- Can be served in half a pepper (red and orange are favourites)
What makes this a perfect summer recipe is that you don’t heat up your house making it (especially if you’re using a rice cooker)! Yes indeed, this recipe is an awesome one. It’s so easy to make and my family loves it!

That sounds yummy, Jennifer. It reminds me of one of the meals that I used to love as a child. It was so simple. My parents were older and country, which I loved about them. They also went through some very hard times, so they were great at stretching a dollar. They learned some great things to cook that were really cheap. They called it “stewed salmon”. From what I can remember it was really just a can of salmon with some water added that was heated and served over rice. I am sure they added butter and seasoning, but it was so simple and so good. It’s been years since I’ve thought about that. Thanks for sharing. I just pinned it.

I love salmon. Did you ever buy the Pacific salmon at Trader Joe’s? I think it’s in the fresh section and it’s about six or seven bucks. I wonder if that would work as well as the canned for this recipe? The consistency might be similar but it’s big chunks.We buy it a lot and it needs to be added to a recipe! You can’t just eat it from the container.

I don’t think I’ve ever been to a Trader Joe’s… we live in Canada, so maybe they don’t have that store here. I imagine any salmon would work (I would estimate about 3/4 cup-1 cups worth would do? Smash it up real good).

hmm, that looks good, but there is no way I could get hubby to try. Not sure about the mayonnaise . Maybe substitute that foe tofu sour cream? Our go to meal is taco salad. Be well.

This sounds delicious to me but I SO messed with my husband and salmon. Salmon and rice was the very first meal that I ever tried to cook for him. I bought the wrong kind. What I got was like a whole salmon stuffed in a can – bones and all. YUCK. I will try this again for myself. When I say something is just for me, that\’s when my family wants to try it. ;-)

Definitely give it a try Kenya! I would love to hear what you think of it. The recipe is very forgiving… I’ve never screwed it up. Sockeye salmon has the bones in it but they’re so good for you (full of calcium) – you just need to mash it up really well. If that scares you off, then try canned pink salmon… that usually doesn’t have the bones in it.

I just made this for a second time, using cauliflower (for the rice). We added the cucumber, avocado, and soy sauce and it was like having a salmon roll (in a bowl).

Someone gave me some pouches of peppered seasoned pink salmon. Basically one step above cat food. (haha) So I tried this using only the salmon, mayo and soy sauce.
I was surprised. It’s actually pretty good. I’ll add chives next time to dress it up.

Add me to the list of fans. I can’t get real fresh salmon so I get canned, and I only had 2 recipes. One of which one son hates, the other of which the other son barely tolerates. This was good and I’ll definitely add it to my repertoire. I added peas since I am trying to clean out the freezer, and it was good.
